Because January 1st is for easy wins, cozy vibes, and minimal cleanup. This is a toss-it-together, one-pan dinner that feels comforting without being heavy — perfect for easing into the new year.

🛒 Ingredients

  • 1 lb boneless, skinless chicken breast (cubed)
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1 cup shredded cheddar or Colby-Jack cheese
  • 1 cup frozen peas or mixed veggies
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • Salt & pepper to taste
  • Optional: chopped parsley or green onions for topping

🍳 Directions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with garlic powder, onion powder, paprika, salt, and pepper.
  3. Add chicken to the skillet and cook until lightly browned (about 4–5 minutes).
  4. Stir in rice and chicken broth. Bring to a gentle boil.
  5. Cover, reduce heat to low, and simmer for 15–18 minutes, until rice is tender.
  6. Stir in frozen veggies and sprinkle cheese over the top.
  7. Cover again for 2–3 minutes, until cheese is melted.
  8. Garnish and serve warm.
