Today, let’s dive into Italian cuisine’s cozy, comforting world with a delicious Mushroom and Spinach Risotto. Perfect for a chilly evening, this dish will surely delight your taste buds with its creamy texture and rich flavors.

Ingredients:

  • Arborio rice: 1½ cups
  • Fresh mushrooms (such as cremini or shiitake), sliced: 2 cups
  • Fresh spinach, chopped: 2 cups
  • Vegetable broth: 4 cups
  • Dry white wine: ½ cup
  • Onion, finely chopped: 1
  • Garlic cloves, minced: 2
  • Grated Parmesan cheese: ½ cup
  • Unsalted butter: 2 tablespoons
  • Olive oil: 2 tablespoons
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Broth: In a saucepan, keep the vegetable broth warm over low heat.
  2. Cook the Mushrooms: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add mushrooms and cook until they are soft and browned, about 5 minutes. Remove from skillet and set aside.
  3. Sauté Onions and Garlic: In the same skillet, add the remaining olive oil and butter. Add onions and garlic, cooking until the onions are translucent.
  4. Toast the Rice: Add the Arborio rice to the skillet, stirring continuously until the grains are coated with oil and slightly toasted.
  5. Add Wine: Pour in the white wine and stir until it’s absorbed by the rice.
  6. Cook the Risotto: Begin adding the warm broth, one ladle at a time, stirring continuously. Wait until each addition is almost fully absorbed before adding the next. Continue this process until the rice is al dente and has a creamy consistency, about 18-20 minutes.
  7. Add Mushrooms and Spinach: Return the cooked mushrooms to the skillet. Add the chopped spinach, stirring until the spinach wilts.
  8. Finish with Cheese: Remove from heat and stir in the Parmesan cheese. Season with salt and pepper to taste.
  9. Serve: Garnish with fresh parsley and additional Parmesan cheese if desired.
