Hearty Mushroom & Spinach Risotto

Ingredients:
- Arborio rice: 1½ cups
- Fresh mushrooms (such as cremini or shiitake), sliced: 2 cups
- Fresh spinach, chopped: 2 cups
- Vegetable broth: 4 cups
- Dry white wine: ½ cup
- Onion, finely chopped: 1
- Garlic cloves, minced: 2
- Grated Parmesan cheese: ½ cup
- Unsalted butter: 2 tablespoons
- Olive oil: 2 tablespoons
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Broth: In a saucepan, keep the vegetable broth warm over low heat.
- Cook the Mushrooms: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add mushrooms and cook until they are soft and browned, about 5 minutes. Remove from skillet and set aside.
- Sauté Onions and Garlic: In the same skillet, add the remaining olive oil and butter. Add onions and garlic, cooking until the onions are translucent.
- Toast the Rice: Add the Arborio rice to the skillet, stirring continuously until the grains are coated with oil and slightly toasted.
- Add Wine: Pour in the white wine and stir until it’s absorbed by the rice.
- Cook the Risotto: Begin adding the warm broth, one ladle at a time, stirring continuously. Wait until each addition is almost fully absorbed before adding the next. Continue this process until the rice is al dente and has a creamy consistency, about 18-20 minutes.
- Add Mushrooms and Spinach: Return the cooked mushrooms to the skillet. Add the chopped spinach, stirring until the spinach wilts.
- Finish with Cheese: Remove from heat and stir in the Parmesan cheese. Season with salt and pepper to taste.
- Serve: Garnish with fresh parsley and additional Parmesan cheese if desired.
