🥔 Loaded Air Fryer Potato Bites: Crispy, Cheesy & Ridiculously Easy
Crispy potatoes. Melted cheese. Bacon. Frankly, we could probably stop writing right there. 😂 These Loaded Air Fryer Potato Bites give you everything that’s great about loaded potato skins without having to bake giant potatoes, scoop them out, refill them and turn a simple snack into an afternoon project. Just slice some baby potatoes, toss them with a few seasonings, crisp them in the air fryer and pile on the good stuff. They’re perfect for game day, parties, movie night, or an easy side dish. And yes, eating them directly from the plate while standing at the kitchen counter is also acceptable.

🥔 What You’ll Need
- 1 lb baby potatoes
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- Salt and pepper
- 1 cup shredded cheddar cheese
- ½ cup cooked, crumbled bacon
- Sour cream
- Sliced green onions

Use baby potatoes that are roughly the same size so they cook evenly. Give the larger ones an extra cut if necessary.
🔥 How to Make Loaded Air Fryer Potato Bites
1. Cut & Season
Wash the potatoes and cut them in half. Toss with olive oil, garlic powder, salt and pepper until they’re lightly coated. An oil sprayer works really well here because you can give the potatoes an even coating without drowning them in oil.
2. Air Fry Until Crispy
Place the potatoes cut-side down in your air-fryer basket in a single layer. Air fry at 400°F for about 12–15 minutes, shaking or flipping them about halfway through. Cooking times vary a little by air fryer and potato size, so check them toward the end. You want the outside golden and crispy and the inside tender enough to easily pierce with a fork. 3. LOAD ‘EM UP 🧀🥓
Here’s where things improve considerably.
Turn the potatoes cut-side up and sprinkle them with:
Shredded cheddar + crumbled bacon
Return them to the air fryer for another 1–2 minutes, just until the cheese is hot and melted.
Do not wander away.
We’re melting cheese, not aging it.
4. Finish With the Good Stuff
Transfer the potatoes to a plate and finish them with:
🥄 A little sour cream
🌿 Sliced green onions
That’s it.
You’ve got crispy potatoes, gooey melted cheddar, smoky bacon and cool sour cream in one little bite.
Basically a loaded baked potato you can eat with your fingers.

If you’re making a large batch, don’t overcrowd the air fryer. Cook the potatoes in batches so the hot air can circulate around them and actually make them crispy.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat them in the air fryer at about 350°F for a few minutes until they’re hot and crispy again.
I’d add fresh sour cream and green onions after reheating, not before.
Nobody asked for hot sour cream.
