Some foods just sound intimidating.

“Soufflé” is definitely one of them.

It sounds like something you’d only order at an expensive restaurant while pretending you totally understand the wine list. But honestly? A cheese soufflé is basically warm, fluffy, cheesy comfort food with a fancy French name — and it’s ridiculously good.

Since today is 🧀 National Cheese Soufflé Day, it feels like the perfect excuse to make something cozy, cheesy, and just a little impressive.


🧀 Easy Cheese Soufflé Recipe

Ingredients

  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 cup milk
  • 4 eggs (separated)
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of garlic powder
  • Butter or cooking spray for ramekins/baking dish

👨‍🍳 Directions

1️⃣ Prep

Preheat oven to 375°F.

Grease a soufflé dish or small ramekins well.


2️⃣ Make the Cheese Base

In a saucepan, melt butter over medium heat.

Whisk in flour and cook for about 1 minute.

Slowly add milk while whisking until smooth and slightly thickened.

Remove from heat and stir in:

  • cheddar
  • Parmesan
  • salt
  • pepper
  • garlic powder

Let cool slightly.


3️⃣ Add Egg Yolks

Whisk egg yolks into the cheese mixture one at a time.


4️⃣ Beat Egg Whites

In a separate bowl, beat egg whites until stiff peaks form.

This is the magic that gives the soufflé its rise.


5️⃣ Fold Together

Gently fold egg whites into the cheese mixture.

Don’t overmix — fluffy is the goal.


6️⃣ Bake

Pour into prepared dish.

Bake for:

  • 25–30 minutes (large dish)
    OR
  • 18–22 minutes (ramekins)

The top should be golden brown and puffed up.

Soufflés wait for nobody.

✅ Sharp cheddar works best
More flavor = better soufflé.

✅ Don’t panic if it deflates slightly
That’s normal. Still delicious.
