- Pizza dough: 1 pound (store-bought or homemade)
- BBQ sauce: ⅔ cup
- Cooked chicken, shredded: 1½ cups
- Red onion, thinly sliced: ½ cup
- Mozzarella cheese, shredded: 1½ cups
- Smoked Gouda cheese, shredded: ½ cup
- Fresh cilantro, chopped: ¼ cup
- Olive oil: for brushing
