🍲 Slow Cooker Loaded Baked Potato Soup
Prep: 15 minutes
Cook: 6–7 hours LOW or 3–4 hours HIGH
Serves: 6–8
Ingredients
- 3 pounds russet potatoes, peeled and diced
- 1 small yellow onion, diced
- 4 cups chicken broth
- 3 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
- 1 cup heavy cream
- 1½ cups shredded sharp cheddar cheese
- ½ cup sour cream
- 6 slices bacon, cooked and crumbled
- 2 tablespoons chopped green onions
For serving: extra cheddar, bacon, sour cream and green onions.
🥄 Directions
1. Load the slow cooker
Add the potatoes, onion, chicken broth, garlic, salt, pepper and thyme.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are very tender.
2. Give It a Mash
Once the potatoes are tender, use a potato masher to mash some of them directly in the slow cooker. Don’t mash everything. Leaving some potato chunks gives the soup that thick, hearty texture we’re after.

Prefer your soup extra smooth? An immersion blender makes quick work of it without transferring hot soup into a blender.
3. Make It Creamy
Stir in the heavy cream, cheddar cheese and sour cream. Cover and cook for another 15–20 minutes, until the cheese has melted and the soup is hot and creamy.
4. Load It Up
Spoon the soup into bowls and add the good stuff:
Bacon. Cheddar. Sour cream. Green onions.
This is loaded baked potato soup. Nobody came here looking for restraint.
🔥 Katahdin Kitchen Tip
