There are certain dinners that just feel like fall. Chicken pot pie is one of them. Creamy chicken. Tender vegetables. Warm biscuits. And, most importantly, a dinner that tastes like you spent considerably more time making it than you actually did. That’s exactly the kind of culinary deception we appreciate at Katahdin Kitchen™.

For today’s CROCKTOBER™ recipe, we’re taking classic chicken pot pie and letting the slow cooker handle most of the work.

Plug it in. Toss it in. Come back to something awesome.

🥕 What You’ll Need

  • 1½–2 pounds boneless, skinless chicken breasts or thighs
  • 1 medium onion, diced
  • 2 cups frozen mixed vegetables
  • 2 cans cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • Salt to taste
  • ½ cup heavy cream or milk
  • 1 package refrigerated biscuits

🫎 Katahdin Kitchen Find

You don’t need a fancy slow cooker for this recipe. A good 6-quart programmable slow cooker is plenty big enough for most family-size CROCKTOBER™ meals and useful for everything from chili to pot roast.

👉 Shop our slow-cooker pick on Amazon.

🥣 Toss It In

Place the chicken in the slow cooker. Add the onion, cream of chicken soup, chicken broth, garlic powder, thyme and black pepper.

Cover and cook:

LOW: 6–7 hours
HIGH: 3–4 hours

Once the chicken is cooked through, shred it with two forks and stir everything together.

💡 Make Shredding Even Easier

If shredded chicken shows up regularly in your tacos, soups, sandwiches and crockpot dinners, meat-shredding claws are one of those inexpensive kitchen gadgets that sound ridiculous until you use them.

👉 Check out meat-shredding tools on Amazon.

Two forks still work perfectly well. They just don’t make you feel quite as much like Wolverine preparing dinner.

🥕 Finish the Filling

Stir in the frozen vegetables and cream or milk. Cover again and cook for another 20–30 minutes, until the vegetables are heated through and the filling is rich and creamy. Want it a little thicker? Crack the lid slightly during the final few minutes and let some of the moisture escape. Give it a taste and adjust the salt and pepper before serving.

🥐 Don’t Forget the Biscuits

Here’s where we avoid one of the great crimes against comfort food: Sad, soggy biscuits.

Bake your refrigerated biscuits separately according to the package directions. Spoon the creamy chicken filling into bowls and place a warm biscuit right on top. You get all the comfort of chicken pot pie without expecting your Crock-Pot to magically turn wet biscuit dough golden brown. Even machinery has boundaries.

⭐ Make It Your Own

One reason this recipe works so well for CROCKTOBER™ is how easy it is to customize.

Add potatoes: Dice a couple of Yukon Gold potatoes and add them at the beginning.

Load up the vegetables: Peas, carrots, corn, green beans and mushrooms all work.

Use rotisserie chicken: Have leftover cooked chicken? Use it and dramatically reduce the cooking time.

Make it extra creamy: Add another splash of heavy cream during the final 20–30 minutes.

Add fresh herbs: A little parsley or fresh thyme gives the finished bowls some color and fresh flavor.

Give it some crunch: A sprinkle of crispy fried onions on top isn’t traditional, but we’re not exactly operating a Michelin-starred establishment here.

🍲 The Cleanup Shortcut

Slow cookers are supposed to make dinner easier. Scrubbing dried cream sauce off one at 8 p.m. somewhat undermines the concept.

If cleanup is your least favorite part, slow-cooker liners can make creamy recipes like this considerably easier.

👉 Shop slow-cooker liners on Amazon.

Reusable silicone slow-cooker liners are another option if you’d rather avoid disposable liners.

🍂 Why This One Belongs in CROCKTOBER™

This one checks virtually every box. Warm. Creamy. Easy. Family-friendly. Budget-friendly. And it requires very little active cooking.

Start it earlier in the day, let the slow cooker do its thing, bake some biscuits when you’re ready to eat, and dinner is done. That’s exactly what CROCKTOBER™ is supposed to be about. Not complicated recipes. Not 37 ingredients.

Just easy comfort food that makes fall taste better.
