Simple, Hearty & Made for Cozy Days

DOOZY DELISH™ | SOUPTEMBER™

Some foods spend decades trying to become trendy.

Chicken noodle soup doesn’t have to.

It’s been sitting there quietly doing its job while humanity invents increasingly questionable things to put in bowls.

Tender chicken. Soft vegetables. Egg noodles. Fresh herbs. A rich, savory broth.

That’s it.

And when it’s chilly outside, you’re feeling under the weather, or you simply want dinner to taste like somebody actually cared when they made it, homemade chicken noodle soup is hard to beat.

For Souptember™ Recipe #3, we’re going back to a classic.

Let’s make a bowl of awesome. 🍲

🛒 What You’ll Need

For the soup:

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth or stock
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 1 bay leaf
  • ½ teaspoon black pepper
  • Salt to taste
  • 3 cups cooked shredded chicken
  • 3 cups wide egg noodles
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice, optional

Serves: 6–8
Prep: 15 minutes
Cook: 35 minutes
Total: About 50 minutes

🍲 Let’s Make It

1. Start with the vegetables

Heat the butter and olive oil in a large Dutch oven or soup pot over medium heat.

Add the onion, carrots and celery.

Cook for about 6–8 minutes, stirring occasionally, until the vegetables begin to soften.

Add the garlic and cook for another 30 seconds.

That combination of onion, carrot and celery is doing considerably more work than its résumé suggests.

2. Build the broth

Pour in the chicken broth.

Add the thyme, rosemary, bay leaf and black pepper.

Bring everything to a gentle boil, then reduce the heat and simmer for about 10–15 minutes, until the carrots are nearly tender.

3. Add the chicken

Stir in the shredded chicken.

A rotisserie chicken works beautifully here, which also turns this into a very realistic weeknight dinner rather than a culinary endurance event.

Let everything simmer together for another 5 minutes.

4. Noodle time

Add the egg noodles directly to the pot.

Cook according to the package directions, usually around 6–8 minutes, until they’re tender but not mushy.

Remove the bay leaf.

5. Finish it

Stir in the fresh parsley.

Then taste.

Add salt and additional pepper as needed.

For one little DOOZY upgrade, stir in about a tablespoon of fresh lemon juice right before serving.

You shouldn’t necessarily taste lemon. It simply brightens the broth and makes everything taste a little more alive.

🫎 The Doozy Tip: Don’t Murder the Noodles

There’s a narrow but important line between tender egg noodles and something resembling beige wallpaper paste.

Don’t overcook them.

And if you’re making the soup specifically for leftovers, there’s an even better trick:

Cook the noodles separately.

Store them separately from the soup and add them to individual bowls when reheating.

Otherwise those innocent-looking noodles will spend the night drinking your broth like tiny carbohydrate sponges. 😂

🔥 Make It Your Own

Extra Hearty: Add more chicken or noodles.

More Vegetables: Toss in peas, corn, spinach or mushrooms.

Creamy Chicken Noodle: Add a splash of heavy cream near the end.

Herby: Add fresh thyme, rosemary or dill.

Little Kick: Add crushed red pepper.

Shortcut Version: Rotisserie chicken + quality chicken stock gets dinner on the table considerably faster.

🥡 Leftovers

Store chicken noodle soup in an airtight container in the refrigerator for 3–4 days.

Reheat gently on the stovetop or in the microwave.

If the noodles have absorbed some broth overnight, simply add a little more chicken broth when reheating.

The soup itself can also be frozen, but for best results freeze it without the noodles and add freshly cooked noodles when serving.

⭐ The Awesome Meter™

Comfort: 🫎🫎🫎🫎🫎
Difficulty: Easy
Weeknight Worthy: Absolutely
Family Friendly: Very
Leftovers: Excellent
Cold/Rainy Day Rating: Basically required

THE VERDICT: CLASSIC AWESOME.

There are fancier soups.

There are certainly stranger soups.

But there’s a reason chicken noodle has survived generations of food trends without needing to reinvent itself.

It just works.
