One Big Bowl of Cozy You’ll Want All Fall Long

DOOZY DELISH™ | SOUPTEMBER™ #5

Hearty. Creamy. Ridiculously Good.

There are soups you serve alongside dinner.

Then there are soups that are dinner.

This Creamy Sausage, Potato & Kale Soup falls firmly into the second category. It’s loaded with savory Italian sausage, tender potatoes, fresh kale, garlic and Parmesan, all swimming around happily in a rich, creamy broth.

Basically, if fall could be ladled into a bowl, this would be it. 🍂

It’s easy enough for a weeknight, hearty enough for a cold Saturday night, and practically begs for a loaf of crusty bread sitting next to it.

Welcome to SOUPTEMBER™ #5.

A Bowl of Awesome Awaits…

🛒 What You’ll Need

  • 1 pound mild or sweet Italian sausage
  • 1 tablespoon olive oil, if needed
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1½ pounds Yukon Gold or russet potatoes, cut into bite-sized pieces
  • 6 cups chicken broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon crushed red pepper flakes, optional
  • 3 cups chopped kale, tough stems removed
  • ¾ cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • Fresh parsley or additional Parmesan for serving

Serves: 6
Prep: 15 minutes
Cook: 35 minutes
Total: About 50 minutes

🥄 Let’s Make Some Soup

1. Brown the sausage

Add the Italian sausage to a large soup pot or Dutch oven over medium heat. Break it into bite-sized pieces and cook for about 6–8 minutes, until browned and cooked through.

Transfer the sausage to a plate, leaving about a tablespoon of the rendered fat in the pot. If you’re using particularly lean sausage, add a splash of olive oil.

2. Build the flavor

Add the diced onion and cook for 4–5 minutes, until softened.

Stir in the garlic and cook for another 30 seconds.

At this point, the house already smells like you’ve accomplished something impressive. Take the win.

3. Bring in the potatoes

Add the potatoes, chicken broth, Italian seasoning, black pepper, salt and optional red pepper flakes.

Return the sausage to the pot.

Bring everything to a gentle boil, reduce the heat and simmer for 15–20 minutes, or until the potatoes are fork-tender.

4. Add the kale

Stir in the chopped kale and simmer for another 3–5 minutes, until tender.

It will look like an unreasonable amount of kale when you first put it in.

It isn’t.

Leafy greens are dramatic like that.

5. Make it creamy

Reduce the heat to low and stir in the heavy cream and Parmesan.

Let everything warm together for another 2–3 minutes. Avoid bringing it back to a hard boil once you’ve added the cream.

Taste and adjust the salt and pepper.

🫎 The Doozy Tip™

Want that broth a little thicker without dumping in even more cream?

Before adding the kale, scoop out about a cup of the cooked potatoes with a little broth. Mash the potatoes with a fork, then stir them back into the soup.

Instant thicker broth. No flour required.

🔥 Make It Your Own

Turn up the heat: Use hot Italian sausage and add extra red pepper flakes.

Swap the greens: Baby spinach works perfectly. Add it during the last couple minutes of cooking.

Make it even heartier: Toss in a drained can of cannellini beans.

Lighten it up: Substitute half-and-half for the heavy cream.

Go completely overboard: Sprinkle crispy bacon over the finished bowls.

Necessary? Absolutely not.

Delicious? We both know the answer.

🥖 Don’t Forget the Bread

This soup is hearty enough to stand on its own, but a warm piece of crusty Italian bread or toasted sourdough for dunking takes things to another level.

Garlic bread works too.

Because apparently carbohydrates needed a dipping sauce.

🧊 What About Leftovers?

Store leftover soup in an airtight container in the refrigerator for 3–4 days.

Reheat it gently on the stovetop over medium-low heat. The soup will thicken as it sits, so add a splash of chicken broth or cream if needed.

Because potatoes and cream can change texture after freezing, this is one soup that’s best eaten fresh or refrigerated.

Trust us. Finishing it shouldn’t be much of a hardship.

🍂 This Is What SOUPTEMBER™ Is All About

Cooler nights. Hoodies coming back out. Football on television. Leaves beginning to turn.

And a big pot of something ridiculously good simmering on the stove.

Creamy Sausage, Potato & Kale Soup isn’t complicated or fancy. It’s simply warm, hearty, comforting food that makes fall feel a little more like fall.

Grab a bowl.

Grab some bread.

Maybe go back for seconds.
